Cheese Soup

Creamy and rich, hearty and tasty – and so easy to make.

Ingredients

500 ml vegetable stock
500 ml milk
ca. 300 g cheese blend or Bergkäse young
50 g butter
2 tablespoons flour
50 ml white wine
salt, pepper, nutmeg

Preparation

Step 1
Melt butter in a pot and stir in flour.
Step 2
When flour and butter have blended add the vegetable stock and milk while stirring constantly to prevent the soup from catching on the bottom.
Step 3
Heat the soup just to boiling and add the white wine.
Step 4
Remove the soup from heat and gradually add the grated cheese. Use a stick blender to blend the soup until smooth.
Step 5
Season the soup with salt, pepper and nutmeg, garnish with chives and enjoy.
